Ingredients of Kaiseremmel Bread:

– All-purpose flour- Salt- Sugar- Instant yeast- Water- Butter (softened)

  1. Wheat flour 500# 390 grams
  2. Rye flour 1150# 35 grams
  3. What ( approx 20 degrees Celsius) 240 grams
  4. Instant yeast 4 grams
  5. Salt 7 grams
  6. Butter 7 grams

Baking Pans: – Two kaisersemmel baking pans OR one large baking sheet Instructions: Preheat oven to 350 degrees F (175 degrees C).

How to Make Kaiseremmel Bread

  1. Mix the above ingredients well and ferment at 3 to 4 degrees Celsius for 3 days.
  2. Pour all the ingredients into the mixer, mix with the lowest speed for 5 minutes, then use the high speed mixer for 8 minutes to knead the dough into a hard, firm and slightly sticky dough, (dough temperature of approx 26 degrees Celsius).
  3. Ferment at 24 degrees Celsius for approx 90 minutes, then take out the dough every 30 minutes and repeat the folding process.
  4. Divide the dough into 9 equal parts, knead the dough into a round, and fermented dough for 10 minutes
  5. Place the dough on a lightly floured table, knead it into a 10cm diameter disk, press it with your fingers to make a pattern, place it on a cloth with the pattern side down, and let it ferment for 45 minutes at 24 degrees Celsius.
  6. Turn the dough over, place it on a baking sheet and spray it with a little water.
  7. Bake in a 230 degree Celsius oven with the steam on for about 20 minutes. Finally, spray a small amount of water again.

Tips: In addition to the original bread, other flavors can be made by sprinkling with sesame seeds and chia seeds.
